Fall Veggie Kebabs

 

Ok --for you doubters and people who fail on getting your veggies every day, this is a FILLING recipe. You get a lot of food, a few veggie servings and WOW -- under 300 calories!

 

- 4 corns of cob - husked

- 3 zucchini

- 3 sweet peppers (any color you like, red, green, orange, yellow -- mix it up!)

- 1 tbsp vegetable oil

 

Coriander Lime Butter

- 2 tbsp butter

- 1 tbsp minced fresh coriander

- 1 tbsp lime juice

- 1/4 tsp each salt and pepper

 

In saucepan, cook or steam corn until tender but firm. Let cool and cut into 1 inch pieces. Cut zucchini into 3/4 inch thick rounds. Seed, core and cut peppers into 2 inch squares. Alternately thread vegetables onto metal skewers (or soaked wooden skewers) You can do this up to 24 hours ahead of time if you wish.
Brush skewers with oil and place on greased grill over medium high heat. Close lid and grill for 10 minutes turning as needed.
Meanwhile whisk together the coriander lime butter ingredients and brush over skewered vegetables. Grill until vegetables are tender.
Makes 4 servings
